I am really bummed I didn’t get a picture of the Sweet Potato Gratin I made. It was SO good. A nice break from the sugary sweet marshmallow sweet potatoes.
Sweet Potato Gratin
- 4 lbs. sweet potatoes, sliced 1/4″ thick (I used my Kitchenaid slicer attachment, super fast)
- 1 cup grated parmesan cheese
- 3 tablespoons butter
- 2 cups cream
- 1 teaspoon salt
- 1/2 teaspoon white pepper
- 1/4 teaspoon cayenne pepper
Butter large casserole dish with half the butter. Layer 1/3 sweet potatoes, 1/4 cup parmesan, repeat for three layers, ending with 1/2 cup parmesan. Dot with remaining butter. Whish salt, pepper, and cayenne into cream and pour over potatoes. Bake at 375 degrees for 45 minutes.
